Banana Strawberry Bread Recipe With Glaze: Easy Strawberry Banana Bread made in just one bowl, topped with a fresh strawberry glaze. This is a simple dessert bread that is perfect for summer days, after school, or breakfast on the weekend.

  • Strawberries are in this week’s bake; they’re my favourite treat in the spring. Even though I love all kinds of banana bread, I had to make one with strawberries. Since I’ve made a lot of banana bread,
  • most of them are pretty thick. I don’t care if the banana bread is thick or not. But if I have to pick, I’ll make it lighter and fluffier.
  • Because it only requires one dish, this recipe is referred to as a “one bowl” recipe. I have prepared it by first combining the wet components and then adding the dry ones, but I have also made it by combining the dry ingredients and then including the rest of the ingredients.
  • In my experience, the most effective approach is to begin by combining the liquid components, and then proceed to incorporate the dry components. In this manner, the batter will not have a tendency to overmix and become more difficult.

 

How to Make the Best Strawberry Banana Bread:

  • Use bananas that are too ripe. Because they taste best when they have brown spots, I wait until then to use them.
  • Greek yoghurt or sour cream can help the baking powder work better. Baking powder is what makes the food rise.
  • A thicker mix makes banana bread fluffier and less dense. To keep my bread nice and soft, I use a little more flour than banana.
  • Mix too much! I’ll say it over and over again. For quick breads, the dough is only mixed until it’s just combined. This makes the bread soft and fluffy instead of dense and rubbery.

Ingredients

  • ½ cup (8 oz) butter, melted and cooled
  • ⅓ cup sour cream or plain greek yogurt
  • 1 egg
  • 2 medium bananas, mashed (¾ cup)
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated white sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1-½ cups diced strawberries tossed in 3 Tablespoons flour

 

For the glaze

  • 2 Tablespoons strawberries, mashed
  • ½ teaspoon vanilla
  • 1 cup powdered sugar

 

Instructions

  • Preheat oven to 350 F. In a large mixing bowl, combine melted butter, sour cream (or plain greek yogurt), egg, 2 mashed bananas, and vanilla. Mix well.
  •  On top of wet ingredients add flour, brown sugar, white sugar, salt, and baking powder and mix until just combined, fold in strawberries that have been tossed in flour. Batter will be thick.
  • Bake at 350 F in a greased 9×5 inch loaf pan for 50-55 min or until inserted toothpick comes out clean.
  • Combine ingredients for glaze. Let bread cool for 10-15 min, then drizzle glaze over top of loaf.
