Practically Homemade, a leading food blog in the United States, has included a recipe for banana crumb cake. I am going to be honest and say that I am not exactly a fan of bananas. There are times when I will consume one that is extremely green. Except for this banana crumb cake, there is no other exception.

 

Ingredients

  • 1/2 cup butter {softened}
  • 1 cup sugar
  • 3 ripe bananas {mashed} or about 1 1/4 cups
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tbsp sour cream
  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Crumb Mixture

  • 1/2 cup butter {softened}
  • 1 cup brown sugar
  • 1 cup flour
  • 3/4 tsp cinnamon

 

Instructions

Bake at 350 degrees Fahrenheit. Put a baking dish measuring 9 inches by 13 inches aside and grease it with cooking spray or butter.

Using your hands or two forks, crush the cold butter cubes, flour, sugars, and cinnamon together in a large basin until the mixture resembles a crumbly topping. This should take about a minute. Remove the crumb mixture off the table.

The flour, baking powder, cinnamon, and salt should be mixed together in a large bowl using a whisk. Put aside for later. Butter that has been softened should be mixed in a stand mixer on medium speed until it becomes creamy, which should take about two minutes.

After one minute of mixing, add the sugar and continue until it is well combined. The next step is to combine the eggs, vanilla, and mashed bananas into the mixture to the extent that they are completely incorporated (do not overmix!).

The mixer should be turned down to a low speed, and milk and flour should be mixed in alternately until all of the components are blended.  Half of the cake ingredients should be poured into the baking dish that has been prepared.

The crumb mixture should be topped with ⅓ to ¼ of the mixture. After that, a layer of the remaining cake batter should be poured on top of that layer, and finally, the remaining crumb topping should be spread out evenly.

Bake at 350 degrees for fifty to fifty-five minutes, or until a toothpick tested clean. To prepare the glazing that is optional: You should combine the powdered sugar and one tablespoon of milk in a small bowl and whisk them together.

Any additional milk that is required should be added until the glaze reaches the desired consistency. Put aside for later. After allowing the cake to cool at room temperature for five to ten minutes, drizzle the glaze over the final product, slice it, and serve it.

Butter: In order to make the crumb topping, the butter sticks should be cut into little cubes, and it is important to remember that the butter must be COLD. Any kind of spread should not be attempted to be used for this purpose.
