Banana Bread With Dried Cranberries Recipe: The traditional banana bread that is made with dried cranberries in this mouthwatering recipe is absolutely incredible. No matter whether it is served hot or cold, with or without butter, this moist and tender bread is absolutely delicious.

INGRIDENTS :

  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 large eggs
  • 3 Tbsp. buttermilk
  • 1 cup ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup dried cranberries

Instructions

  • Either a loaf pan measuring 9 inches by 5 inches or three mini loaf pans measuring 3.5 inches by 5 inches should be greased.
  • The sugar, shortening, and eggs should be combined in a large bowl. Mix in the eggs and buttermilk mixture.

 

  • Flour, baking powder, baking soda, and salt should be mixed together in a separate bowl using a sifter.
  • In a large bowl, add the flour mixture in alternating fashion with the bananas.

 

  • Do not overmix the ingredients; stir until everything is incorporated. Mix in the dried cranberries and stir.
  • Pour into pans that have been greased and level. While you preheat the oven to 350 degrees, let it relax.

 

  • Bake the contents of the larger pan for fifty to sixty minutes. Bake the three mini pans for thirty-five to forty minutes.
  • To finish cooling, remove the baked bread from the pan and place it on a wire rack after allowing it to cool for fifteen minutes in the pan. Have fun! Notes are provided below for the streusel topping that is optional.

Notes

Mix the following ingredients together in a small bowl to make the streusel topping, which is optional. A quarter cup of all-purpose flour, a quarter cup of brown sugar, two teaspoons of sugar, and half a teaspoon of cinnamon.
