Apple Fritter Bread RecipesÂ
This bread is just as delicious as apple fritters, but because it bakes quickly, you may bake it rather than fry it. Sliced apples with brown sugar and cinnamon on top will practically caramelize in the oven, giving them a tender texture that will melt in your tongue!
Ingredients
Apple Bread
- 3 small Granny Smith apples, peeled, cored, and diced small (about 2 cups)
- ½ cup (100 g) light brown sugar, packed
- 1 tablespoon ground cinnamon
- ⅔ cup (133 g) granulated sugar
- ½ cup (1 stick / 113 g) unsalted butter room temperature
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- ½ cup (122.5 g) whole milk, room temperature
- 1 ½ cups (187.5 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
Glaze
- 1 cup (125 g) confectioners’ sugar
- 2-3 tablespoons whole milk
Instructions
Apple Bread
Turn the oven on to 350°F. Grease a 9-by-5-inch loaf pan with cooking spray that is nonstick. Put aside.
Add apples, cinnamon, and brown sugar to a medium-sized bowl. Toss to coat the apples well. Put aside.
Granulated sugar and butter should be combined in the bowl of a stand mixer and mixed for two to three minutes, or until light and fluffy.
Pour in milk, vanilla, and eggs. Blend at a moderate pace until thoroughly combined.
Mix in the salt, baking powder, and flour until just combined, scraping down the sides of the basin as necessary.
Take out the stand mixer’s bowl. Add ¾ of the apples and fold. (Save about ½ cup for the topping.)
Fill loaf pan with prepared mixture.
Add the remaining apples on top.
Bake for 65 to 70 minutes, or until the bread reaches an internal temperature of 200°F. A toothpick inserted should come out covered in crumbs rather than moist batter.
Remove the bread from the pan with care and lay it on a wire rack.
