Today I’m excited to share this almond flour banana bread with you! I already have a lot of different versions of this recipe on the blog. Getting it just right took a few tries because gluten-free flour is not the same as regular wheat flour and can be hard to bake with at times. But the meal I’m going to share today is so damn good that it was all worth it!
It’s perfectly moist and tastes great with a light nutty flavour. So this loaf is also very healthy because almond flour is full of protein, fiber, and good fats. I am excited for you to try it!
Ingredients
- 3 ripe bananas
- 3 large eggs
- 1/4 cup melted coconut oil or melted butter
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped nuts or chocolate chips for extra flavour and texture

Instructions
After preparing a loaf pan by either spraying it with cooking spray or coating it with parchment paper, the oven should be preheated to 350 degrees Fahrenheit. The loaf pan should then be lined with parchment paper. Using a large mixing basin, combine the mashed banana, eggs, maple syrup, and vanilla extract.
Mix until everything is well distributed. All of these components ought to be mixed together with the assistance of a whisk.
