Ingredients

 

  • 2 teaspoons Kosher salt
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon garlic powder

 

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon ground sage

  • 3 pounds whole chicken, I buy organic, humane raised

 

Instructions

 

  • Put the spices in a small basin and mix.

 

  • After giving the chicken a quick spritz of olive oil, evenly spread the seasonings over it.

 

  • Optional: Tightly tie the chicken’s legs together with a length of butcher’s twine for a more attractive bird. You can now put it in the refrigerator, uncovered, until you’re ready to cook.

 

  • Place the chicken in the air fryer basket and cook as directed.

 

  • After placing the entire chicken, belly side down, in the air fryer, cook it at 350°F for about 25 minutes, or until the top is browned. After that, turn the thigh over and cook for a further 25 minutes, or until the internal temperature reaches 165°F and the juices run clear and no longer pink when a pairing knife is inserted near the joint. This will require more time for a larger bird. (Place the thermometer between the thigh and the thickest portion of the leg.)
  • Once cooked, transfer the chicken to a tray and allow it to rest for ten minutes before slicing and serving. If desired, save the sliced carcass for stock.
  • Serve the chicken with or without the skin.

  • When baking, bake at 400°F for approximately an hour, or longer if necessary, or until the meat is 165°F internally and the juices run clear when a knife is inserted between the leg and the thigh.
