Ingredients

AD
  • 1 boneless skinless chicken breast (or two small)
  • 2 large eggs
  •  cup Panko bread crumbs
  • ¼ cup + 1 tablespoon grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ cup tomato sauce (seasoned tomato pasta sauce)
  • ½ cup shredded mozzarella cheese

Instructions

Heat the air fryer to 400 degrees Fahrenheit.

Butterfly-splitting chicken breasts yields two thinner pieces. Just lay the chicken breasts on a chopping board and press a flat hand on top of them.

Make a deep incision in the centre of the chicken breast using a sharp knife. Using a paper towel, pat dry.

Beat the eggs in a big shallow bowl.

Mix bread crumbs, ¼ cup Parmesan, Italian seasoning, salt, black pepper, and paprika in a separate sizable shallow dish.

Dredge chicken in egg mixture, letting excess fall off.

Dredge chicken in panko mixture, pushing to ensure it sticks firmly.
Give the air fryer basket a quick spritz of non-aerosol oil. Place the chicken in the air fryer after giving it a light coat of oil on both sides.

Cook till light golden, 5 minutes per side.

Place half of the tomato sauce and mozzarella on top of each. Let the two pieces of cheese melt for a further two minutes after dividing the remaining 1 tablespoon of Parmesan between them. Verify that the inside temperature has increased to at least 165 degrees Fahrenheit. Assist.

Notes

There will be a considerable reduction in the nutrition information because not all of the egg and breading mixture will be used. It’s hard to pinpoint a precise amount because it varies depending on the cook.

Leftovers: Store leftovers in the refrigerator for 3–4 days or freeze for up to 2 months if stored in an airtight container. Reheat in the air fryer or the oven until they are heated through and crisp again. First, if frozen, thaw.
