Ingredients

  • 1 pound linguini (uncooked, or any pasta)
  • ¾ cup olive oil
  • 1 head garlic (peeled and sliced)
  • 2 teaspoon red pepper flakes
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)
  • ½ cup parsley (fresh, chopped)

Optional toppings

  • ½ cup Parmesan cheese (freshly grated)
  • lemon juice

Instructions

Heavily salt a large saucepan of water and bring it to a boil. When the fettuccine is al dente, or just little underdone, add it and cook.

In a big deep skillet or saute pan, heat the olive oil over medium heat while the pasta cooks.

Stir in the red pepper flakes and the garlic slices after the oil has reached a boil. Sauté the garlic until it starts to become a light golden brown. Add pepper and salt for seasoning.

Reduce the heat to medium-low and mix in the cooked pasta, draining well, and parsley. Add roughly half a cup of pasta water if the pasta seems too dry.

Add some lemon juice and newly grated Parmesan cheese as garnish.

Notes

Option for Pasta: You can use any type of pasta you desire, although the usual options are spaghetti and linguine. Check the instructions on the package since cooking times may differ.
Olive Oil: Since olive oil forms the foundation of your sauce, choose premium extra virgin olive oil for maximum flavor.
Slicing the Garlic: To ensure consistent cooking, slice the garlic thinly. It may burn easily and turn bitter, so don’t mince it.
Chili Flakes: To suit your desired level of heat, adjust the quantity of red pepper flakes. You can always add more in the end, so start with less.
Pasta Water: Before draining, don’t forget to set aside some pasta water. It works wonders for changing the consistency of the sauce.
Seasoning: Use salt and pepper to taste and adjust the seasoning as needed. Recall that the pasta water also contributes saltiness.
