Ingredients
- 1 tablespoon extra virgin olive oil
- 2 pounds fully cooked polska kielbasa , cut in half lengthwise, then cut into 2 inch pieces
- 1 small head cabbage , core removed, coarsely chopped
- 1 large sweet onion , cut into large pieces
- 3 cloves garlic , minced
- 2 teaspoons sugar (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons rice wine vinegar
- 1 1/2 teaspoons dijon or brown grainy mustard

Instructions
In a large, nonstick sauté pan set over medium-high heat, add the kielbasa to the olive oil. Stirring occasionally, cook for one minute. Next, stir once in a while for roughly three minutes. Transfer using a slotted spoon to a plate.
Add the cabbage, onion, garlic, sugar, salt, and pepper to the same skillet that has some of the rendered kielbasa grease in it. Once combined, cook, stirring regularly, for 5 minutes or longer, depending on how tender you prefer your vegetables.
Stir in the mustard and vinegar, then return the kielbasa to the pan and heat it through for an additional two minutes. If needed, adjust the seasoning by tasting it.

NOTE: If you’re not following a low-carb diet, think about finishing with some cooked egg noodles or roasted potatoes. They taste great! As mentioned, the sugar is optional in this recipe, but it does an excellent job of balancing the sharp vinegar and mustard with the salty kielbasa.
