Perfect Sweet Potato Fries

 

Ingredients

 

  • 1 pound sweet potatoesabout 2 medium
  • 2 tablespoons cornstarch

 

  • 2 tablespoons water
  • ½ teaspoon garlic powderplus more to taste

 

  • ½ teaspoon paprikaplus more to taste
  • ½ teaspoon sea saltplus more to taste
  • Extra-virgin olive oilfor drizzling

 

Instructions

 

  • Set out two baking sheets and line them with parchment paper. Preheat the oven to 425°F. Put two oven racks in the oven’s upper and bottom thirds.
  • Cut the sweet potatoes lengthwise into planks that are ¼ to ½ inch thick. Vertically cut the planks into ¼- to ½-inch-thick sticks. Any very long sticks should be cut in half crosswise. In the oven, the smaller pieces will get crispier. The sweet potatoes should be put in a big basin.
  • Mix the cornstarch and water in a small bowl until the cornstarch is completely dissolved. Finally, sprinkle the salt, paprika, and garlic powder over the sweet potatoes. Using your hands, toss to coat, making sure the spices are dispersed equally.

 

  • Leaving some room between each fry, evenly distribute the sweet potato fries on the baking sheets that have been prepared. Give it a liberal drizzle of olive oil.
  • Bake until the underside begins to blister, about 15 minutes. Take out of the oven and flip the fries using tongs. Drizzle a little additional oil on them if they appear dry.
