To satisfy my craving for sweets without going overboard, I have recently discovered a straightforward answer in the form of these sweet potato oatmeal cookies.

 

Ingredients

  •  cup sweet potatocooked and mashed
  •  cup pure maple syrup
  • ½ cup unsweetened almond butter
  • 2 cups rolled oats
  • 1 tsp ground cinnamon
  • ½ tsp sea salt
  • Optional Additions:
  • 1 tsp pure vanilla extract
  • ½ tsp ground ginger
  • ½ cup to 1 cup chocolate chips

 

Instructions

Cook the sweet potato in the manner that you choose (for instructions on how to cook, read the paragraph that was just above this one). Bake at a temperature of 350 degrees Fahrenheit. Using parchment paper, line a large baking sheet with the material.

Allow the potato to reach room temperature before proceeding. By putting it in the refrigerator to cool down, you can make this process go more quickly. Once the sweet potato has reached a temperature that allows it to be handled, use a fork or a potato masher to mash it, and then measure out half a cup. After the sweet potato has been mashed, transfer it to a large bowl and add the almond butter, pure maple syrup, and vanilla extract (if you are using it).

In an oven that has been prepared, place cookies on the middle rack and bake them for ten to twelve minutes, or until the edges of the cookies have a golden brown color. The cookies should be removed from the oven and allowed to cool for a minimum of ten minutes before being removed from the cookie sheet. Have fun!

NOTES

If you want to keep them for longer, you can freeze them. When putting them away, check to see that they have totally cooled down. The fact that these cookies are both vegan and gluten-free (provided that you use oats that have been confirmed as gluten-free) makes them appropriate for a wide range of dietary needs.
