Strawberry Rolls Recipe – Easiest Recipe Ever
These sweet, fluffy, and soft rolls are the perfect summertime treat since they are loaded with fresh strawberries and topped with a thick cream cheese icing.
Ingredients
For the Dough:
- ½ cup warm whole milk (105°-110°) (120mL)
- ⅓ cup plus 1 teaspoon granulated sugar divided
- 1 teaspoon active dry yeast
- 2 cups all-purpose flour (240g)
- ¼ cup unsalted butter (57g)
- ¼ teaspoon salt
- 1 large egg
For the Filling:
- ¾ cup chopped fresh strawberries (106g)
- ½ cup strawberry jam (160g)
For the Icing:
- 2 ounces cream cheese room temperature (57g)
- 1 tablespoon unsalted butter room temperature
- ½ cup powdered sugar (60g)
- 3 tablespoons whole milk
- ¼ teaspoon vanilla extract
Instructions
In order to make the dough, combine the yeast, one teaspoon of sugar, and warm milk in a small basin and stir until combined. Allow to stand for five to ten minutes, or until bubbling. It is necessary to incorporate the remaining one-third cup of sugar, flour, butter, salt, and egg into the bowl of a stand mixer. Make sure to use the paddle attachment and mix the ingredients together on medium-low speed until they resemble coarse crumbs. Make sure you are using the dough hook attachment.
The milk mixture should be added. After approximately eight minutes of beating on medium-low speed, a smooth and sticky dough should have formed. When immediately touched, the dough should not adhere to a clean finger, despite the fact that it will have a tacky texture. In the event that the dough is sticking to your fingers, additional flour should be added as required, and it should be mixed in one spoonful at a time.
Coat a big bowl with a little oil. To ensure that the dough is evenly coated, scrape it into the basin that has been oiled. Cover and allow to rise in a warm place until it has doubled in size, which should take approximately an hour. Turn out the dough that has risen on a board that has been lightly dusted with flour.
Make the dough into a square by pressing it with your hands, and then release some of the air that is trapped inside of it. The dough should be rolled out into a rectangle measuring 12 inches by 16 inches.
The pie plate should be lightly brushed with butter or sprayed with baking spray. The filling can be made by combining the jam and strawberries in a small bowl and stirring them together.

Cover the dough with the mixture, making sure to leave a border of half an inch on one of the shorter sides.
Beginning with the short side that is opposite the border, use your fingers to loosely wrap the dough into a log, and then pinch the seam to seal it. Using a dental floss that is flavorless or a knife with a serrated edge, cut off half an inch from either end of the log and throw it away.
Create eight rolls out of the log. In the pie dish that has been greased, place each roll with the cut side down. Cover loosely and allow to rise in a warm place until it has doubled in size, which should take around half an hour to an hour. While the dough is rising, preheat the oven to 350 degrees Fahrenheit.
Bake for 25 to 30 minutes, or until the top is golden brown, after removing the lid. Set aside to chill while you prepare the icing.
Regarding the Icing: Beat the cream cheese and butter together in a bowl of medium size until they are thoroughly blended. The powdered sugar, milk, and vanilla need to be added. Continue beating until the mixture is smooth. Spread on top of the warm buns in a uniform manner.

If you do not have powdered sugar, you can manufacture homemade powdered sugar by following my instructions and using ordinary sugar instead of powdered sugar. Before you use your yeast, check that the temperature of your milk is between 105 and 110 degrees Fahrenheit. Should the milk be cold, the yeast will not be able to bloom.
After preheating the oven to 350 degrees Fahrenheit for one minute, turn it off to provide a warm environment in which the dough can rise. With the door closed, the oven will be at the ideal temperature for rising, which is warm enough to be comfortable. Just remember to remove the dish from the oven before you begin the process of preheating it for the bake time!
It may appear that there is not much filling when it is distributed on the dough, but as it is wrapped up, there is a sufficient amount in each roll. In the event that you put in an excessive amount of filling, it will escape while the strawberry rolls bake.
Due to the fact that adding a large amount of flour will result in rolls that are dense, the best accurate method for measuring flour is to use a kitchen scale. In the event that you do not possess a digital scale, you can use a spoon to fluff the flour, then scoop it into the measuring cups, and then use a knife to level out the top of the mixing bowl. By doing so, you will prevent the measuring cup from becoming overfilled with liquid.
