Ingredients

 

  • 2 large eggs
  • 3 Tbsp avocado oil

 

  • 3 Tbsp pure maple syrup
  • 1 tsp apple cider vinegar

 

  • 2 cups finely ground almond flour
  • ½ tsp baking soda

 

  • 1 ½ tsp ground cinnamon
  • ½ tsp ground ginger

 

  •  tsp ground nutmeg
  • ½ tsp sea salt

 

  • 1 large carrotgrated (about 1 cup of shredded carrot)
  • 1 large Fuji applepeeled and grated

 

 

Instructions

 

  • Using a box grater, grate the apple and carrot. Each will require one cup.

 

  • Set aside 7 muffin papers in a muffin tray and preheat the oven to 350 degrees. (Note: this recipe yields a partially filled batch; double the recipe for more muffins.).

 

  • In a large mixing bowl, whisk together the eggs, avocado oil, pure maple syrup, and cider vinegar until well blended.

 

  • Combine the dry ingredients (almond flour, baking soda, nutmeg, ground ginger, and cinnamon) in a separate basin.

 

  • After adding the flour mixture to the bowl containing the wet ingredients, thoroughly mix. Add the grated apple and carrots, and stir until the muffin batter is thoroughly mixed.

 

  • Spoon the muffin batter into the muffin tin that has been preheated, filling each cup ⅔ of the way.

 

  • Muffins should be baked for 20 to 25 minutes, or until a clean test comes out, on the oven’s center rack.

 

  • It takes me twenty-two minutes. When muffins are cooked through, the internal temperature should read between 190 and 200 degrees F. To ensure that the muffins are cooked through, place a digital thermometer in the middle of each one. To make sure a muffin passes the test, you can also stick a toothpick or butter knife inside of it.

 

  • Before peeling, let the muffins cool to room temperature.
