Instructions

While the butter is on medium heat, melt it in a medium-sized saucepan. Add the all-purpose flour and mix it in with a whisk once the butter is melted.

Stir the roux all the time for one to two minutes, until it turns golden brown and smells nutty. Slowly pour in the beer while whisking all the time to keep lumps from forming.

 

Let it cook on low heat for two to three minutes, until it gets a little thicker. Turn down the heat and add the softened cream cheese, shredded cheddar cheese, and shredded mozzarella cheese slowly to the saucepan.
