Instant Pot Chocolate Muffins Recipe:-It’s easy and good for you to make these cupcakes in an Instant Pot. They can be made from scratch in the Instant Pot or in the oven. The chocolate peanut butter filling is gluten- and dairy-free.
Instant Pot Chocolate Muffins Recipe
Ingredients :
Cupcakes
- 2 bananas ripe and mashed
- ¼ cup almond milk or soy milk
- ½ cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup rice flour or whole wheat flour
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
Frosting
- ¼ cup peanut butter smooth
- 1½ tbsp maple syrup
- 1 tbsp cocoa powder
Instructions :
Instant Pot
In the Instant Pot, put a trivet down and add 2 cups of water.
In a medium-sized bowl, mash two big bananas. Add the egg, vanilla extract, rice flour, baking soda, baking powder, and salt, and stir them in slowly. Now is the time to add any mix-ins that you want.1 egg, 1/4 cup maple syrup, 1/4 cup almond milk, 1/4 cup rice flour, 1/4 teaspoon baking soda, 1/4 teaspoon baking powder, and 1/4 teaspoon salt.
Spray cooking spray on the silicone cupcake cups and fill each one ¾ of the way to the top with batter. A springform pan, ramekins, or mason jars can also be used.
Wrap the cupcakes in aluminum foil very tightly, and then put them on the plate. It’s possible that you will need to make two rows. In that case, turn the cups just a little to keep the cupcakes from piling up on top of each other.
Lock the lid and close it. Then, turn the valve so that it seals. Pick Up Pressure Set the timer for 25 minutes and cook. It should be cooked for 35 minutes if you are making a cake.
In a small bowl, mix peanut butter, maple syrup, and cocoa powder together while your cupcakes are cooking.
Mix the cocoa powder in until there are no more lumps.1/4 cup peanut butter, 1/2 tablespoon maple syrup, and 1 tablespoon cocoa powder
Let the pressure drop on its own when the cooking time is up. The lid should be taken off and the cupcakes should be taken out carefully once the pressure valve drops

Get the cupcakes out of the metal foil and let them cool to room temperature.
Spread 1 tablespoon of frosting on top of each cupcake with a spatula after they have cooled.
Warm the oven up to 350°F.
Spray some cooking spray on a cupcake pan.

Put ¾ cup of batter into each cupcake hole.
After 35 minutes, or until a knife goes in and comes out clean, it’s done.
In a small bowl, mix the peanut butter, maple syrup, and chocolate powder together while the cupcakes are cooking. Mix the cocoa powder in until there are no more lumps.1/4 cup peanut butter, 1/2 tablespoon maple syrup, and 1 tablespoon cocoa powder
Let your cupcakes cool down until they’re not hot or cold.
When the cupcakes are cool, use a spatula to put 1 tablespoon of frosting on top of each one.

Recipe Tips :
You can use one cup of plain applesauce instead of the bananas if you don’t like them or are allergic to them.
You can easily mash your bananas with a hand-held potato masher.
From time to time, I like to leave the cocoa powder out of it. It’s great with or without the chocolate in the sweet peanut butter filling.
Amounts of rice flour can be used instead of whole wheat flour or gluten-free flour.
You can also make this into a cake. Just pour the batter into a springform pan that has been sprayed with cooking spray. Cook on high pressure for 35 minutes and let the pressure drop naturally.
It’s easy to make these a little sweeter by adding chocolate chips. It needs an extra 1/4 cup.
