Healthy Watermelon Salad Recipe

My favorite season is watermelon season! I even throw this summery fruit on the grill and add it to my watermelon sangria recipe since I adore its sweet, icy, and refreshing flavor. I’m serious when it comes to watermelon.

My summers in Port Said, Egypt, where I grew up on the Mediterranean, were spent at the beach and eating watermelons. With my favorite snack in hand—slices of watermelon topped with crumbles of creamy feta—I recall spending long days on the sunny beach.

Ingredient

For The Honey-Lime Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil I used Greek Early Harvest
  • pinch of salt

For The Watermelon Salad

  • ½ watermelon peeled, cut into cubes
  • 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • ½ cup crumbled feta cheese, more to your liking

Instructions

For the dressing, prepare: Honey, lime juice, olive oil, and a bit of salt should be mixed together in a small bowl after being whisked together. Just put that aside for a second.

Prepare the salad by: Watermelon, cucumbers, and fresh herbs should be mixed together in a large bowl or on a serving dish that has sides provided.

Notes

You may make this dish more interesting by including shallots or red onions, avocado cubes, or chili peppers. In addition, you may season the salad with a pinch of pepper flakes made in the Aleppo style, which imparts a touch of heat while also bringing out the sweetness of the peppers.
Because this is a very watery salad, with watermelon and cucumber being the lead ingredients, it is recommended to finish it on the same day that you cook it. This is because the watermelon and cucumber are the hero ingredients. If you do have any leftovers, however, you can store them in a glass container with a tight-fitting cover for a night or two (but make sure to taste them before serving).
