Healthy Strawberry Oatmeal Cookies Recipe
Ingredients
- 2 large ripe bananas, mashed (⅔ cup)
- ¼ cup (60 ml) pure maple syrup
- 1/3 cup (160 g) unsweetened almond butter
- 2 cups (214 g) quick oats
- 1/2 tsp sea salt
- 3/4 cup (110 g) fresh strawberries, chopped into small chunks
Optional Additions:
- 1 tsp pure vanilla extract
- 1 ½ tsp ground cinnamon
Instructions
Set out a large baking sheet and cover it with parchment paper before preheating the oven to 350 degrees.
In a sizable basin, mash the bananas until smooth and creamy. Pour in the almond butter and pure maple syrup (as well as the vanilla extract, if using) and stir until the wet components are fully incorporated and the mixture becomes thick and sticky. Note: If your almond butter is refrigerated, you may either microwave it for 20 to 30 seconds, or until it’s easy to stir, before baking it, or you can set it out on the counter for about 20 minutes.
Toss in the wet ingredients in a mixing bowl, followed by the dry ingredients (oats and sea salt) and, if desired, the ground cinnamon.
Mix everything thoroughly. Chop the strawberries and add them to the basin of oatmeal cookie mixture. Stir until the strawberries are evenly mixed into the biscuit dough. It’s typical for the cookie batter to be thick and quite sticky.
Using a spoon or small cookie scoop, drop mounds of dough onto the baking sheet that has been prepped. Keep in mind that the cookies will remain the same size and shape after baking, so select your cookie cutter wisely. I prefer to bake nine large round biscuits, but you can
Place the cookies on the center rack of a preheated oven and bake for 10 to 15 minutes, or until they feel firm when probed and have a little golden brown edge. It will take 8 to 12 minutes to make smaller cookies, and 12 to 15 minutes to make larger cookies.
After taking the cookies out of the oven, let them cool for ten minutes or more before placing them on a wire rack. Simply wait for the cookies to cool completely on the cookie sheet before peeling them off and serving if you don’t have a wire rack.
