Ingredients
- 3 medium apples (about 1.25 pounds)
- 1/4 cup honey
- 2 cups old-fashioned or quick-cooking oats
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
Instructions
Turn the oven on to 350°F. Grease a 9-by-5-inch loaf pan very lightly with nonstick cooking spray and keep it aside.
Cut and core the apples. Peeling is not necessary unless it is desired.
In a strong blender, add all the ingredients and process until smooth and thoroughly mixed. Avoid over-blending the batter since this can warm the oats and turn them into oatmeal, preventing the loaf from baking with a texture similar to bread.
Fill loaf pan with prepared batter. When a toothpick inserted in the center comes out clean, bake for 30 to 35 minutes.
Cover the loaf with foil until it is baked through if the top begins to brown more quickly than the center.
Allow loaf to cool fully in loaf pan. Bread should be kept in the refrigerator in an airtight container.

How to Store Fresh Apple Bread
Heat or serve room temperature. Remaining bread should be refrigerated in an airtight container.
Bread must first cool thoroughly before freezing. After that, carefully wrap it in plastic wrap and place it in a freezer-safe baggie to be kept in the freezer. Make sure to tightly wrap the bread. Bread keeps its excellent quality in the freezer for two to three months when stored correctly.
