If grasshopper pie is unfamiliar to you, it is called after the traditional cocktail and has a flavor profile akin to that of creamy mint chocolate! With only six key ingredients, this no-bake dessert is surprisingly simple to make.

 

Ingredients

  • 1 chocolate crumb crust
  • 10 ounces marshmallows (about 34)
  • ½ cup milk
  • 2 tablespoons Mentholmint or Creme de menthe
  • 2 tablespoons Creme de cacao
  • 1 cup heavy whipping cream
  • 2-3 drops green food coloring (optional)

 

Instructions

Melt the marshmallows and milk in a big pot over medium heat, stirring to ensure that they melt evenly and without burning.

Add the liqueurs and whisk until melted. Let this mixture cool down without solidifying.

 

Beat the heavy whipping cream with an electric mixer or a stand mixer until stiff peaks form.

After the marshmallow mixture has cooled, fold it into the whipped cream, and if desired, add a few drops of green food coloring.

 

Fill the pie crust with this mixture. Cover and chill for two to three hours or overnight, or until set.

Add extra whipped cream, chocolate shavings, crushed chocolate biscuits, fresh mint, or whatever else you wish to garnish the top! Present chilled.

While you’re making the whipped cream, it could be helpful to remove the marshmallow mixture from the pan and let it cool more rapidly.

The most important step in this easy recipe is to watch out for the temperature of the mixture. It should not be so high that it melts the whipped cream when you fold them together.

 

The majority of store-purchased crumb crusts have a removable plastic cover that you can turn over and use to shield the pie as it cools in the fridge.
