Roasted Sweet Potato Rounds Appetizer Recipe • Veggie Society

 

Ingredients

 

For the Roasted Cranberries

 

  • 1-½ cups fresh or frozen cranberries
  • 2 tablespoons balsamic vinegar

 

  • 1 teaspoon orange zest
  • ¼ cup fresh-squeezed orange juice

 

  • 1 tablespoon olive oil
  • 1/8 teaspoon ground cinnamon

 

  • pinch sea salt
  • ¼ cup honey

Sweet Potato Rounds:

 

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil

 

  • Sea salt
  • 5 ounces goat cheese

 

  • roasted almonds
  • Honey for drizzling

 

Instructions

 

Prepare the Balsamic Roasted Cranberries:

 

  • Set the oven temperature to 425 degrees Fahrenheit.

 

  • Combine the orange zest, orange juice, olive oil, sea salt, cinnamon, and balsamic vinegar in a small bowl.

 

  • Place the cranberries in a shallow casserole dish, cover the cranberries with the balsamic mixture, and whisk to blend.

 

  • Bake, covered with foil, until tender, about 15 minutes. Take off the foil, pour in the honey, and give it a good swirl. After ten minutes, stir one more. The combination should now resemble jam or chutney, the cranberries should have lost their shape, and the fluids should have thickened. Store it until you’re ready to use it. For the sweet potato slices, reduce the oven temperature to 400 degrees Fahrenheit.

 

Roast the Sweet Potato Rounds:

 

  • Spread a thin layer of olive oil over the sweet potato slices and arrange them on a baking sheet.

 

  • After adding a pinch of salt, roast for 15 to 18 minutes, or until golden.

 

  • After giving the rounds a gentle flip, roast for a further 10 to 15 minutes, or until they are crisp or done as desired. Take it out of the oven and put the appetizer together.

 

Make the Appetizer:

 

  • To keep the oven hot, turn it off but keep the door closed.

 

  • Top each sweet potato circle with a spoonful of toasted cranberries after spreading ½ to 1 tablespoon of

 

  • goat cheese over it. Put in the oven, still warm, and heat for five to ten minutes.

 

  • Add a honey drizzle and honey-roasted almonds on top.
