Fabulous Chicken Cordon Bleu Casserole Recipe
The week following Thanksgiving, I’m not in the mood to cook anything besides pie. Hold on. Put an end to pie. That was a week ago. I wanted to share with you my love of chicken cordon bleu, made simple.
INGREDIENTS
- 5 1/2 cups shredded rotisserie chicken
- 2 cups cubed ham
CHEESE SAUCE:
- 4 tablespoons unsalted butter
- 1/4 cup all-purposed flour
- 2 cups milk
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt, (add more to taste)
- 1 1/4 cups shredded Swiss cheese, (5 ounces)
- 1/4 cup grated Parmesan cheese
PANKO TOPPING:
- 1 cup Panko bread crumbs
- 2 tablespoons butter, melted
INSTRUCTIONS
Apply cooking spray to a 9×13 casserole dish and preheat the oven to 350 degrees.
Arrange the chicken in a layer at the base of the casserole dish. Place a layer of ham over the chicken.
To make the cheese sauce, melt the butter in a skillet over a medium heat.
After adding the flour, simmer the mixture for one to two minutes, or until it becomes clumpy and dry. Gradually whisk in the milk. Add the salt, garlic powder, mustard, and lemon juice. Simmer, whisking continually, for three to five minutes, or until mixture thickens. Take off the heat and mix in the Parmesan and Swiss cheeses.
If necessary, taste and add additional salt. Evenly pour over chicken and ham mixture.
To make the Panko topping, thoroughly mix the melted butter and Panko breadcrumbs in a small basin. Top the dish with a sprinkle.
Bake, uncovered, for 30 to 35 minutes, or until the casserole is bubbling and the breadcrumbs are golden brown. After letting it cool for five to ten minutes, serve. Serve this on its own, over rice or pasta, or both.
