Ingredients

  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • salt and pepper, to taste
  • 2 tablespoons oil
  • 4 chicken breasts (about 1 pound)
  • 1/2 cups DeLallo Creamy Vodka tomato sauce (or any tomato sauce – but that vodka sauce is YUMMY)
  • 4 slices fresh mozzarella cheese
  • 2 zucchinis

Instructions

The oven should be preheated at 425 degrees. Place the breadcrumbs, panko, and Parmesan cheese in a shallow dish and add the Italian herbs, salt, and pepper then toss to combine. The oil should be heated in a skillet that can go in the oven and is of medium size.

The chicken breasts should be cut into a total of four pieces, and then the chicken should be dredged in breadcrumbs in such a way that the breadcrumbs adhere to the entire surface of the chicken.

 

The chicken should be fried for three to four minutes on each side after being added to the hot skillet. It is optimal for the exterior to have a golden brown colour, while the interior can be finished cooking in the oven.

After placing the pan in the oven, roast it for five to ten minutes, or until the chicken is completely cooked through the centre.

 

Each piece of chicken should have a slice of mozzarella cheese placed on top of it, and then the sauce should be added.

Put the dish back into the oven for a few more minutes, or until the cheese has begun to bubble and has developed a light brown colour.

 

While you wait for the chicken to complete cooking, you can either use a spiralizer to create zucchini noodles or chop the zucchini into thin shavings

When you want to make sure that the chicken is thin, you can use chicken cutlets or chicken tenders, which are smaller.
