Crispy Mediterranean Air Fryer Chicken Thighs Recipe  :-Air Fryer Mediterranean Chicken Thighs are tender, juicy and make a simple recipe. I love the crispy skin that the air fryer gives to chicken thighs and how little clean-up is involved. You can change up the spices that are used in the marinade depending on what you have on hand.

Crispy Mediterranean Air Fryer Chicken Thighs Recipe

 

Ingredients :

  • 2 – 1 pound packages of Organic Smart Chicken bone-in, skin-on chicken thighs
  • 1/2 cup of extra virgin olive oil
  • 2 Tablespoon red wine vinegar
  • 1 lemon, juiced + 1 teaspoon lemon zest
  • 4 garlic cloves, minced
  • 2 teaspoons oregano
  • 1/2 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper {optional}
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh parsley + feta for garnish

FOR THE MEDITERRANEAN SALAD 

  • 3 medium tomatoes, seeds removed, diced
  • 1/2 of an english cucumber, diced
  • 5-6 green onions, white and green parts chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 1/2 of a lemon, juiced
  • 2 garlic cloves, minced
  • 1 teaspoon of sumac or za’atar {or spice of your choice}
  • Salt & pepper to taste

 

Instructions :

  • In the event that it is required, remove any excess fat from the chicken and dry it with a paper towel.
    Putting the chicken in a big container or a large ziplock bag is highly recommended.
  • Olive oil, lemon, zest, garlic cloves, oregano, thyme, paprika, cumin, cayenne pepper, salt, and pepper should be mixed together in a small bowl and thoroughly combined so that the ingredients may be combined.
  • The chicken should be poured with the marinade, and then the marinade should be massaged into the meat until the meat is completely covered with the marinade.

 

  • Place the mixture in a sealed container or a ziplock bag and place it in the refrigerator for two hours.Preheat the air fryer for five minutes at a temperature of 380 degrees.
  • I like to use a non-stick extra virgin olive oil spray, which is a spray that is designed to prevent food from sticking to the air fryer.
  • There may be a need for you to work in batches, but this will depend on the size of your air fryer. My air fryer has the capacity to cook four chicken thighs at the same time.

 

  • Remove the chicken thighs from the air fryer and place them in the air fryer with the skin side down. Once you are ready to use the chicken thighs, place them back in the refrigerator in the container or ziplock bag until you are ready to use them.
  • Cook for ten minutes with the lid closed on the air fryer. Turn the chicken thighs over so that the skin would be facing upward.
    Continue cooking for a further 14 minutes, or until the temperature on the inside reaches 165 degrees Fahrenheit.
  • In order to achieve the desired level of crispiness, you can cook the skin in increments of two minutes until you reach the desired level of crispiness.

 

  • Ensure that the Mediterranean Salad is positioned at the base of the platter. To finish off the salad, arrange the chicken thighs on top of it and sprinkle some feta cheese and parsley on top. Have fun!

  • To prepare the chicken thighs for air fryer cooking, remove them from the basket and arrange them in a single layer with the skin side down.
