Ingredients
- 113 g unsalted butter, melted (½ cup / 1 stick / 4oz)
- 100 g white granulated sugar (3.5 oz/½ cup)
- 50 g brown sugar, packed (1.8oz oz/¼ cup)
- 1 large egg
- 1 teaspoon vanilla extract
- 130 g plain (all purp) flour (4.6oz / 1 cup)
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup dried cranberries
- ¾ cup white chocolate chips
Instructions
- Turn the oven on to 180°C (350°F) or 160°C (fan forced). Use baking paper to line an 8 x 8-inch square baking pan.
- Melted butter, both sugars, egg, and vanilla should all be combined in a large mixing basin and whisked smooth with a balloon whisk.
- Mix in the salt, baking powder, and flour with a whisk until barely mixed.
- Lastly, fold in the white chocolate chips and cranberries with a spatula.
- Pour the batter onto the prepared pan and try to spread it out as evenly as you can. Bake for 28 to 30 minutes, or until the top seems dry and a toothpick inserted into the center comes out clean, free of moist batter.
- Before slicing into 16 pieces, let the cake cool in the tin for at least 15 minutes. Suitable for room temperature, cold, or heated consumption.
