Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 package (8.5 ounces) cornbread mix
  • 1/3 cup milk
  • 1 egg
  • Optional toppings: sour cream, diced tomatoes, chopped green onions, sliced jalapenos

 

Instructions:

First, preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). To prevent food from adhering to a baking dish measuring 9 by 13 inches, grease it with cooking spray or butter.  sauté the ground beef: In a large pan, sauté the ground beef and chopped onion over medium heat until the beef is browned and the onion is transparent..
