Cilantro Lime Rice Recipe -Step by Step Guide
Ingredients :
- 2 cups basmati rice unrinsed, or any long-grain white rice, rinsed (see note 1)
- 1 bay leaf
- Salt
- 1 teaspoon olive oil or rice bran oil, optional
- 2 tablespoons fresh cilantro minced (or omit or sub parsley)
- 2 tablespoons fresh lime juice from 1-2 limes
- 2 tablespoons fresh lemon juice from 1-2 lemons
Instructions :
To cook basmati rice on the stove top :
In a big pot, bring 8 cups of water to a boil. Place the bay leaf, rice, oil, and salt (I like 2 teaspoons) in a bowl. Bring it back to a boil and stir it again.
Leave the lid off and boil for 10 to 12 minutes. For me, it’s always 12, but some people have said their rice was mushy after 12 minutes, so keep an eye on yours.
Take out the bay leaf. Drain the rice through a fine mesh strainer and run hot water over it to clean it. Put it in a big bowl.
Add the lemon juice, parsley, and lime juice and mix them in. Add more salt to taste; I like an extra ¼ teaspoon. You can serve it hot or cold.
To cook any long-grain rice on the stove top :
Bring 4 cups water to a boil in a large pot. Add rice, bay leaf, oil if using, and salt to taste (I like 2 teaspoons). Bring it back to a boil and stir it again.
Turn down the heat, cover, and cook for 15 minutes.
Take out the bay leaf. Add the lemon juice, parsley, and lime juice and mix them in. Add more salt to taste; I like an extra ¼ teaspoon. You can serve it hot or cold.
To cook long-grain rice in a rice-cooker :
Rinse the rice (see notes), add water (follow the directions on the package, see notes), bay leaf, salt (I like 1 teaspoon), and oil, if you’re using it.
Plug in the rice cooker, close it, and then turn it on. Follow the manufacturer’s directions when cooking.
Take out the bay leaf when the rice is done. Add the lemon juice, parsley, and lime juice and mix them in. If you want more salt, add it. I like ¼ teaspoon. You can serve it hot or cold.
To cook brown rice :
Use the following times to follow the above instructions: 40 minutes for Basmati on the stove, 45 minutes for long-grain on the stove, and 60 to 70 minutes for a rice cooker (or as directed by the make).
Two cups of brown rice give sixteen servings of ½ cup each, which is more than white rice.
 Notes :
Long-grain rice (not Basmati):If you don’t use Basmati long-grain rice, you should rinse it before cooking to get rid of the extra carbs. Put the rice through a fine-mesh sieve that is under cool water. Rinse the rice until the water runs clear. When you’re ready to cook the rice, drain it well. If you want to save water, you can soak the rice in a big bowl of water for up to 30 minutes. This will help get rid of the starch.
When using a rice cooker, It’s important to follow the directions on the package for how much rice and water to use. A lot of rice cookers come with a “measuring cup” that might not be the same as an ordinary 8-ounce cup. For the best results, they will also tell you exactly how much water to use based on their measure cup. Those directions are more accurate than my amounts of rice and water here. Yield: One cup of raw white rice turns into three cups of cooked white rice. If you cook 1 cup of brown rice, you get 4 cups of cooked brown rice.
