Best Italian Chicken Marinade Recipe

I prefer to give the chicken at least an hour to marinade. Although 30 minutes will do, the longer the marinade rests, the more flavour it will impart. You are free to prepare it whatever you see fit from there. It tastes great with a little olive oil in a sauté pan over the stove or on the grill. The recipe card below has directions for both approaches.

I did two types of cooking while I was in college. (1) I took a can of corn, poured it into a bowl, microwaved it, and then covered it completely with butter and salt. (2) Store-bought Italian dressing marinated chicken, cooked in the oven.

Ingredients

  • 6 chicken breaststrimmed

Easy Homemade Italian Dressing

  • 3/4 cup olive oil
  • 1/4 cup red or white wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon lemon juice

Instructions

Add all of the ingredients for the Easy Homemade Italian Dressing to a gallon Ziploc bag and place your chicken breasts inside. Squeeze out any remaining air and seal the bag. Give the chicken a minimum of one hour and a maximum of twelve hours to marinate.

Depending on your taste, you can either grill or sauté your chicken. Below are the instructions for both.

On the Grill

Take out each chicken breast from the bag and set each one over medium heat on a preheated grill. Grill until done, 5 to 7 minutes on each side. (Juices ought to flow freely.)

On the Stove

Heat a skillet with 2 tablespoons of olive oil or another type of frying fat. Oil is heated to a medium-high temperature. (When the chicken sizzles as you put it in the pan, you know it’s ready.) Place a single layer of chicken breasts in the skillet. Simmer for around five minutes. Flip your chicken. Simmer for five more minutes. (The chicken’s juices should run clear and it should be firm to the touch when done.)

Notes

If you’re feeding a large group of people or simply meal prepping, feel free to marinate an additional two chicken breasts. This produces enough marinade for up to eight chicken breasts.
