It might be challenging to find the drive to cook during the middle of summer, particularly on days when the temperature is high. When days like those come along, I find myself gravitating towards utilizing.

INGREDIENTS

  • 1 pint fresh blueberries
  • 2 peaches diced
  • 2 Persian cucumbers sliced
  • 1/2 cup crumbled feta
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt and fresh ground black pepper to taste

INSTRUCTIONS

Combine the blueberries, peaches, cucumbers, and feta cheese in a big bowl that may be used for serving.
Take the lemon juice, dijon mustard, honey, olive oil, basil, salt, and pepper and mix them together in a measuring cup or a jar that has a cover.

It is recommended to shake or whisk the vinaigrette until it is thoroughly blended. The vinaigrette should be poured over the salad, and then everything should be gently mixed together.

Add additional basil as a garnish once you have tasted the seasoning. The salad can be served immediately, or it can be covered and stored in the refrigerator until it is ready to be served.

NOTES

Spread the peaches in half across their equator. NOT from the peak to the bottom. After that, apply a slight twist to them. In a skillet that is dry and cool, add sliced almonds, and then place the skillet over medium heat. Do not leave the room! You should give them a light shake every once in a while until they become fragrant and acquire a little bit of colour. Take them out of the oven and place them in a plate to cool.
