- 2 cups(256 g) grated carrot
- 1 cup(125 g) grated apple , (I used 1 medium Honeycrisp apple)
- 1/2 cup(72.5 g) raisins
- 1/2 cup(54.5 g) chopped pecans , optional
- 3 tablespoons(21 g) ground flax seed (optional)
INSTRUCTIONS
Preheat the oven to 375 degrees Fahrenheit. Paper liners should be used to line a regular muffin tin (this recipe yields 14 to 16 muffins, therefore you should either use a second muffin tin or bake additional muffins once the first batch has finished cooking).Flour, oats, baking soda, cinnamon, ginger, and salt should be mixed together in a medium basin using a whisk until they are thoroughly incorporated. Put aside for later.
