Cherry Almond Blondies Recipe – Know the Secret Tips

These gooey cherry bakewell blondies are the blondie bar counterpart of the Bakewell tart. A sprinkle of almond frosting was used as the finishing touch.

INGREDIENTS

  •  cup all purpose flour or plain flour
  • ½ cup almond flour or finely ground almonds
  • 1 tablespoon cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter melted
  • 1 cup superfine granulated sugar or caster sugar
  • ½ cup light brown sugar sometimes called muscovado, firmly packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ½ cup cherry jam
  • 3 oz white chocolate chips or solid white chocolate cut into chunks
  • 1 oz sliced almonds

Ingredients for Topping

  • ¼ cup powdered sugar or icing sugar
  • ¼ teaspoon almond extract
  • 1 teaspoon water

INSTRUCTIONS

Prepare an 8-inch square baking tray by lining it with parchment paper or wax paper and preheating the oven to 325 degrees Fahrenheit (165 degrees Celsius or 145 degrees fan). Take a medium-sized mixing basin and combine the flour, almond flour, cornstarch, baking powder, and salt by stirring them together. Put aside for later.

Combine the melted butter, sugar, and brown sugar in a large mixing bowl and beat or whisk them together until they are thoroughly blended and emulsified, which should take about two minutes.
The eggs, vanilla extract, and almond extract should be added and beaten together.

To the sugar mixture, add the dry ingredients, and then stir with a spatula until the dry components are barely combined. Next, incorporate the chunks of white chocolate and whisk to ensure even distribution.
Take approximately half of the batter and transfer it to the baking pan that has been prepared. Spread it out evenly to form a layer.

Now, dollop the cherry jam over the top of the blondie layer; putting spoonfuls of the jam in a manner that is spaced out across the batter will make it simpler to spread. Applying it in a layer over the blonde should be done with care.

The remaining batter should be spooned over the cherry jam, and once again, dollops should be used to prevent the batter from spreading too much over the jam. The next step is to sprinkle the sliced almonds over the top of the batter for the blondies.

Insert the dish into the middle of the oven that has been warmed and bake it for approximately half an hour, or until a toothpick that is inserted into the center comes out mainly clean.Take the dish out of the oven and let it cool for approximately two hours right there in the pan. (please notice the note)

Powdered sugar, almond extract, and water are the three components that make up the topping. Combine them in a small mixing dish and whisk them together. Pour the drizzle over the top when you are ready to serve.

NOTES

By allowing the blondies to cool in the pan, they will be able to maintain their gooey consistency without becoming so sticky that they are difficult to handle. You can, of course, reduce the amount of time that they are allowed to cool, but it might be challenging to slice them cleanly.
