Sweet Potato Rounds with Herbed Ricotta and Walnuts Recipe
INGREDIENTS :
- 2 large sweet potatoes – sliced in 1/4 to 1/2 inch rounds
- Olive oil
- Ground cinnamon
For the herbed ricotta:
- 1 cup whole milk ricotta cheese
- 3 tablespoon goat cheese
- 2 teaspoon Italian seasoning
- 1.5 tablespoon honey
- salt – to taste
For Topping
- 1 cup raw or roasted walnuts – chopped
- 1 cup dried cranberries
- Honey
- Fresh thyme and rosemary – finely chopped
INSTRUCTIONS :
The ricotta, goat cheese, Italian spice, honey, and salt should all be mixed together in a small bowl until everything is well mixed. Keep it in the fridge until you’re ready to use it.
Warm the oven up to 400 degrees F and put parchment paper on one or two big baking sheets. Toss sliced sweet potato rounds with olive oil in a large bowl until each side has a light coating of oil.
Put some salt and cinnamon powder on top. Spread the sweet potato rounds out in a single layer on the baking sheet(s) that have been prepared. Bake for 20 minutes.
After 20 minutes, turn the rounds over and bake for another 10 to 15 minutes, or until they are fully cooked and the ends are crispy.
If you want to bake the walnuts, spread them out on a baking sheet and put them in the oven at 400 degrees F for 5 to 7 minutes.
Put a small amount of herbed ricotta on top of each sweet potato round after you’ve made them. Then add some dried cranberries, chopped walnuts, honey, and fresh herbs. Best when served right away.
