Almond Butter No-Bake Oatmeal Cookies Recipe

Almond Butter No-Bake Oatmeal Cookies Recipe :-Almond butter no-bake cookies that are easy to make and only take 30 minutes. They are sweetened naturally with coconut sugar and oats, sesame seeds, and sunflower seeds. a treat or snack that is both healthy and tasty!

 

Almond Butter No-Bake Oatmeal Cookies Recipe

 

Ingredients :

  • 1/2 cup coconut sugar (or sub organic cane sugar)
  • 2 Tbsp unsweetened almond milk (or other non-dairy milk)
  • 3 Tbsp coconut oil (use refined for a less intense coconut flavor // or sub vegan butter)
  • 1/2 tsp pure vanilla extract
  • 1/3 cup salted natural almond butter
  • 1 1/2 Tbsp coconut flour
  • 1/4 cup sesame seeds
  • 3 Tbsp roasted unsalted sunflower seeds (or slivered toasted almonds)
  • 1 cup gluten-free rolled oats
  • 1 pinch sea salt

 

Instructions :

Put wax or parchment paper on the bottom of a baking sheet. Put coconut sugar, almond milk, and coconut oil in a medium-sized pot. Set the pan on medium-low heat and mix them together.

 

Stir the ingredients together in the pan once it starts to bubble, then let it boil for one minute. Take it off the heat and add the salt, sugar, almond butter, coconut flour, sesame seeds, sunflower seeds, oats, and sesame seeds. Stir the ingredients together until they are all fully mixed (see picture).

I used this cookie scoop to drop heaping tablespoons of the mixture onto the baking sheet that has been prepped. You can top with extra sesame seeds if you want to.

 

Around 20 to 25 minutes at room temperature should be enough time for it to cool down and get hard. Though they will be set, they will still be a little soft. Cool in the fridge to cut down on setting time.

 

If you cover leftovers, they will last for two to three days at room temperature, five days in the fridge, or one month in the freezer.
