 Shiitake mushrooms :
Shiitake mushrooms come from East Asia and are often used in Asian cooking. The earthy-tasting mushrooms can be told apart by their brown, rounded caps that look like umbrellas.
Brenna Wallace, M.S., RDN, LDN, a qualified dietitian, says that they are high in fibre, which can help with digestion and heart health1.
It works best for sautés, stir-fries, and soups. “You can also find them in medicinal mushroom blends as tinctures and dried goods,” says Heather Moday, M.D., an integrative immunologist.
The best way to get the health benefits, though, is to eat them.
Portobello mushrooms :
Portobello mushrooms have a flat top and are big. They feel dense and meaty, and they are often used in Italian recipes or instead of meat to make them vegetarian.
Wallace says that they have a lot of potassium, which can help control high blood pressure 2.
Maitake (Hen of the Woods) :
