These Blueberry Cobbler Energy Balls Are the Perfect Bite-Sized Snack
You can use almond butter for a nuttier taste or sunflower butter for something mellower to bind them together. These portable snacks are ready in just 30 minutes and can be stored in your fridge or freezer for a quick grab-and-go snack.
Ingredients
- 1 cup plus 2 tablespoons unsweetened dried blueberries, divided
- ¾ cup old-fashioned rolled oats
- ¾ cup smooth natural almond butter or sunflower seed butter
- ½ cup chopped dried figs
- ½ cup chopped pecans, toasted (see Tip)
- 3 tablespoons chia seeds
- 2 tablespoons honey
- 1½ teaspoons vanilla extract
- ¾ teaspoon ground cinnamon
- ⅛ teaspoon salt
- ¼ cup white chocolate chips
Instruction
Chop two tablespoons of blueberries very finely and set them aside. In a food processor, combine the remaining one cup of blueberries, oats, almond butter (or sun butter), figs, pecans, chia seeds, honey, vanilla, cinnamon, and salt. Mix until everything is evenly distributed.

After pulsing the mixture until it is crumbly but can be pushed to create a cohesive ball, which should take about a minute, stop the processing to scrape down the sides as necessary. Pulse the mixture until it is finely chopped, which should take about ten to twenty pulses.
Squeeze and roll the mixture into 32 balls, each of which should be about one tablespoon in size, using damp hands to keep the dough from adhering to your hands. Place the balls in a single layer on a baking sheet that has been prepared with parchment paper.
Put the white chocolate chips in a small bowl and microwave them on High for thirty seconds at a time, stirring after each interval, until they are completely melted and smooth.
This should take approximately one minute and thirty seconds. Using a drizzler, drizzle the melted white chocolate over the energy balls, and then sprinkle the blueberries that were reserved with chopped powder.
