Vegan Oatmeal Banana Bread Recipe – Step by Step Guide :-  My new all-time favorite breakfast recipe is this vegan banana bread oatmeal. Chocolate chips (because chocolate), walnuts, and additional bananas are added to the oatmeal after it has been sweetened with mashed bananas and dates and slightly seasoned with cinnamon and vanilla. Nut crunch combined with sweet, banana-y deliciousness = yes!

 

Vegan Oatmeal Banana Bread Recipe – Step by Step Guide

This vegan banana bread oatmeal is my newest favourite breakfast recipe of all time. Following the sweetening process with mashed bananas and dates, chocolate chips (due to their chocolate flavour), walnuts, and additional bananas are incorporated into the oatmeal, which has been gently seasoned with cinnamon and vanilla.

 

 

INGREDIENTS

Wet Ingredients

  • 3 medium, very ripe bananas (1 cup + 2 tablespoons mashed)
  • ¼ cup melted coconut oil
  • ¼ cup coconut sugar, brown sugar, or cane sugar
  • ¼ cup pure maple syrup
  • 2 eggs (use flax eggs for vegan)
  • ½ cup milk of choice, room temperature
  • 1 teaspoon pure vanilla extract

 

Dry Ingredients

  • 1 ¾ cups oat flour – if using homemade, make sure it’s finely ground (not coarse) (learn how to Make homemade oat flour here)
  • 1 ¼ cups rolled oats
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon

 

Optional Toppings

  • 1 teaspoon rolled oats
  • 1–2 teaspoons vegan chocolate chips or favorite add-ins

INSTRUCTIONS

After peeling, place the bananas in a big mixing basin. Mash bananas until smooth, using a fork, pastry cutter, or strong whisk (this is my favorite way). Add the eggs, milk, vanilla, sugar, oil, and maple syrup. Mix until thoroughly combined. Set oven temperature to 350°F. Grease foil or parchment paper and line an 8-inch loaf pan. Put aside.

Stir in the cinnamon, baking soda, baking powder, and oat flour. Stir until just combined, being careful not to leave any flour clumps behind. Add-ins should be folded in. Evenly transfer batter into loaf pan. Using a rubber spatula, level the batter into a smooth layer that resembles a loaf with a rise down the middle. Sprinkle with toppings, if desired. Press the toppings firmly into the loaf

For 60–70 minutes, bake. It took me sixty-five minutes. Insert a toothpick into the center of the bread to check for doneness. When the loaf is done, a toothpick inserted into it should come out almost clean, with a few crumbs remaining.

 

Let it cool for an hour on a cooling rack. After that, carefully remove the loaf from the pan and place it, parchment paper and all, directly onto the cooling rack. Let cool completely, about one to two hours. Cut the bread into 12 or 14 pieces. Have fun! Instructions for storage are below.
