For the Chicken

  • 1 1/4 pounds boneless skinless chicken thighs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

For the Cranberry Glaze

  • 2 tablespoons olive oil divided
  • 3 tablespoons minced shallot
  • 12 ounces fresh cranberries rinsed (or frozen and thawed)
  • 3/4 cup water
  • 1/3 cup apple cider vinegar
  • 1 tablespoon honey (or more to suit your taste preferences)
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon allspice
  • 1-2 tablespoons chopped fresh thyme for serving

Instructions

The chicken should be removed from the refrigerator and placed on a plate or tray before being served. Salt and pepper should be added, and then the dish should be allowed to come to room temperature while you prepare the glaze.

Start by heating one tablespoon of olive oil in a big skillet that has a deep bottom over medium-high heat. Approximately two minutes after adding the shallot, sauté it until it begins to brown and has a delicious aroma. Cranberries, water, cider vinegar, and honey should be added to the mixture.

Within five to eight minutes, the berries should have begun to lose their form and become more pliable. As the berries roast on all sides, stir them frequently to ensure that a significant amount of the liquid evaporates.

Once the berries have reached the desired consistency, use the back of a wooden spoon to roughly crush them until they burst, and then mix in the ginger, salt, and allspice. In the end, the mixture will be quite thick. Place the cranberry glaze in a bowl and set it aside.

After thoroughly cleaning the skillet with a paper towel, proceed to heat the remaining one tablespoon of olive oil over medium-high heat. Remove the paper towel. Chicken thighs should be added in a single layer, with the seasoning side facing down, after the pan is hot and shimmering.

For a period of five to seven minutes, the chicken should be allowed to cook without being disturbed until the first side is golden brown and does not adhere to the pan. To ensure that the chicken browns evenly, it is better to avoid moving it around in the pan while it is cooking.

The chicken should be cooked for a further four to six minutes after being turned over, or until the juices flow clear and a meat thermometer inserted in the center of the bird registers 165 degrees Fahrenheit.

Remove the chicken from the oven and place it on a serving plate. Then, drizzle the cranberry glaze over the chicken. After waiting for five minutes, sprinkle the dish with fresh thyme that has been chopped and serve it with additional cranberry glaze for dipping.

Notes

When it comes to storing leftovers, you may keep them in the refrigerator for up to three days if you put them in an airtight container.

In order to freeze the chicken with cranberry sauce, place it in a container that is safe for freezing and freeze it for up to three months. Allow to defrost in the refrigerator overnight before reheating.

Reheating can be accomplished by warming the food in the microwave, in a skillet with a lid over medium-low heat, or in a slow cooker until it is completely heated. In order to rehydrate the sauce before heating it, it is possible that you will need to add a few tablespoons of water to it.
