Skinny Blueberry Banana Bread Recipe -Learn like a Pro :-You would never guess that this Skinny Banana Bread with Blueberries is so much lower in fat and calories than any other banana bread recipe. Soft and full of taste! It has 139 calories and 3 Weight Watchers SP.

 

Skinny Blueberry Banana Bread Recipe -Learn like a Pro

 

Ingredients :

  • 3 ½ ripe bananas divided
  • ½ cup coconut palm sugar or brown sugar lightly packed
  • ⅓ cup unsweetened applesauce
  • 1 egg whisked
  • 1 teaspoon pure vanilla extract
  • 1 ½ cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 ¼ cups fresh or frozen blueberries divided

 

Instructions :

Warm the oven up to 350 degrees F. oil a 9-by-5-inch loaf pan with cooking oil.

Use the back of a fork to mash three bananas in a large bowl until you have one cup of mashed bananas. Mix in the brown sugar or coconut palm sugar, apple sauce, egg, and vanilla. Use a stir to mix.

Put the baking powder, baking soda, cinnamon, nutmeg, salt, and whole wheat pastry flour in a medium bowl and mix them together with a whisk.

The flour mixture should be mixed into the banana mixture until it is well mixed. Add one cup of blueberries and mix well.

Place the batter into the cake pan that has been prepared. Use a rubber spatula to spread it out evenly. To make the batter even, hit the pan hard on the counter two times.

 

Put the last ¼ cup of blueberries in the middle of the batter. Cut the last ½ banana into thin slices and place them on top of the batter in any shape you like.

It will take about an hour of baking until a toothpick stuck in the middle (but not through the blueberries) comes out clean. For 15 minutes, let the bread cool in the pan. Grab the pan and let it cool all the way down. Serve or cover and put in the fridge.
