- 1 teaspoon garlic powder
- 1 cup Greek yogurt (plain)
- 1 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper to taste
- 4 cups mixed greens (spinach, arugula, or your choice)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
Instructions:
Prepare the chicken: Preheat the oven to 375°F (190°C). Season the chicken breasts with garlic powder, oregano, salt, pepper, and olive oil. Place the chicken on a baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C). When the poultry has cooled, it can be sliced or shredded.
In a medium basin, combine grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper to prepare the tzatziki sauce. Combine thoroughly. Refrigerate for up to two days or serve immediately. Fresh salads are optimally consumed.
Prepare the Salad: In a sizable salad bowl, combine cherry tomatoes, red onion, Kalamata olives, crumbled feta cheese, and mixed greens. Place the chicken, either sliced or shredded, on top. Drizzle the Tzatziki sauce over the contents and mix thoroughly.
