Pineapple Carrot Cake Recipe

Ingredients

Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ¾ cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups shredded carrots
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 (8 ounce) can crushed pineapple, drained

Frosting:

  • 1 (8 ounce) package cream cheese
  • ¼ cup butter, softened
  • 2 cups confectioners’ sugar

Directions

  1. Pre-heat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Clean and flour a pan measuring 9 by 13 inches.

  2. In order to make the cake, take a big bowl and combine the following ingredients: flour, cinnamon, baking soda, baking powder, and salt. In the middle of the mixture, create a well, and then add the sugar, oil, eggs, and vanilla. For a smooth consistency, mix with a wooden spoon.
