Ingredients
- 1 Tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 2 Tbsp chili powder
- 1 Tbsp ground cumin
- 1 tsp dried oregano
- 1 cup beef broth, or chicken broth
- 2 Tbsp tomato paste
- 2 tsp unsweetened cocoa powder
- 2 14 oz cans black beans, or red kidney beans (drained and rinsed)
- 2 14 oz cans crushed tomatoes, or strained tomatoes (tomato passata)
- 2 cups corn, frozen or canned (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
Click the sauté button (if your Instant Pot runs hot, adjust to less). Add oil and chopped onions to the Instant Pot once it’s heated. After around three to four minutes, onions should be softly browned. Add the minced garlic and cook for a further 30 seconds.
Stir in oregano, ground cumin, chili powder, and ground meat. Cut the meat into small pieces and cook for about 4 minutes, or until browned.
Mix the tomato paste, unsweetened cocoa powder, and beef broth in a small basin until the powder dissolves. To deglaze the pot, pour the mixture into the Instant Pot. Scrape the pot’s bottom with a spatula.
Stir in the beans and mix until well blended. Next, sprinkle tomatoes on top without stirring. Stacking the components stops the burn mistake from occurring.
Cook on high pressure for ten minutes while covered. After ten minutes of natural release, quickly release the remaining pressure. Take off the cover and mix everything together until well blended.
To add corn, simply select the Saute option and add the sweet corn. Simmer the corn for a few more minutes, or until it is tender.
Serve with sour cream and cheese on top, and season with salt and black pepper to taste.
