Healthy Easy Shrimp Fried Rice Recipe: Better than takeout, this nutritious shrimp fried rice is tasty and simple to make! This simple shrimp recipe can be prepared in less than 30 minutes with store-bought convenience items, making it an ideal midweek supper.

Ingredients

  • 1 lb medium raw shrimp peeled and cleaned
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves grated
  • 2 teaspoons grated ginger
  • 1 tablespoon sliced green onions white parts
  • 1/4 cup teriyaki sauce
  • 2 eggs beaten
  • 16 ounce bag of frozen stir fry mixed vegetables
  • 3 cups cooked brown rice
  • 3 teaspoons sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon chili oil

In a small bowl, toss together the shrimp, garlic, ginger, sliced green onions, and 1 tablespoon olive oil.

In a large skillet or wok, heat the remaining tablespoon of olive oil over medium-high heat. The shrimp should be added to the hot oil and cooked until they turn pink and opaque. This process should take three to four minutes.

After taking the shrimp out of the pan, transfer it to a fresh bowl. After emptying the bowl of liquid, add the teriyaki sauce and stir.

Add the beaten eggs to the same pan and cook until just set. This process takes one to two minutes. Top the shrimp in the bowl with the eggs.
