Ingredients
- 1 lb medium raw shrimp peeled and cleaned
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves grated

- 1/4 cup teriyaki sauce
- 2 eggs beaten
- 16 ounce bag of frozen stir fry mixed vegetables
- 3 cups cooked brown rice
- 3 teaspoons sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon chili oil
Instructions
In a small bowl, toss together the shrimp, garlic, ginger, sliced green onions, and 1 tablespoon olive oil.
In a large skillet or wok, heat the remaining tablespoon of olive oil over medium-high heat. The shrimp should be added to the hot oil and cooked until they turn pink and opaque. This process should take three to four minutes.
After taking the shrimp out of the pan, transfer it to a fresh bowl. After emptying the bowl of liquid, add the teriyaki sauce and stir.
Add the beaten eggs to the same pan and cook until just set. This process takes one to two minutes. Top the shrimp in the bowl with the eggs.
In the same pan, add the frozen veggies and cook over medium-high heat for 4–5 minutes, or until the vegetables are well heated. Remove any surplus moisture from the pan.
After heating up one tablespoon of sesame oil, add the rice to the pan. After cooking for around two minutes in the pan with a stir, continue cooking the rice for an additional two minutes. This process aids in producing crispy rice.
Add the vegetables, eggs, soy sauce, sesame oil, chili oil, and shrimp. Cook for an additional two minutes, or until cooked through.
Notes
Either fresh or frozen shrimp will work, just make sure they are uncooked. When cooked shrimp is used in a recipe, it might become rubbery.
Prepare the shrimp in advance. Cleaning shrimp is the most time-consuming step, so try to buy clean, raw shrimp. If not, prepare and clean the shrimp the day before to avoid stress and wasted time the evening you want to prepare this dish.
