My sluggish approach to food prep is transformed into true genius by raiding the cupboard and refrigerator and dumping anything that catches my eye into the crock. Preserved because tastes and textures eventually combine to provide a stunning eating experience.
For hectic days or special events, this simple slow cooker pulled pork and apples recipe creates a tasty supper for the whole family.
Ingredients
- 3 to 4 lbs pork shoulder roast, *
- 2 tsp dried paprika
- 2 tsp dried oregano
- 2 tsp ground cumin
- 1.5 tsp Sea salt, to taste
- 1/2 tsp black pepper, to taste
- 1 large yellow onion, finely chopped
- 2 medium-sized apples, **
- 6 large cloves garlic, minced
- 1 1/2 cups unfiltered apple cider
- 1 cup chicken broth or beef broth
- 3 Tbsp cider vinegar
- Tbsp molasses
Instructions
Take out the netting, if used, and place the pork roast onto a sizable platter. Add paprika, oregano, cumin, sea salt, and black pepper to the meat’s entire surface, then gently massage the flavors in.
Chop the onion and garlic and add them to the slow cooker’s bottom. In the same way, add the chopped apples and the seasoned pork roast to the slow cooker.
In a measuring cup, combine the apple cider, broth, cider vinegar, and molasses; stir thoroughly. Transfer this blend into the slow cooker.
Remove the netting if any, and transfer the pork roast to a large dish. Season the entire surface of the meat with paprika, oregano, cumin, sea salt, and black pepper. Gently work the spices into the meat.
Chop the onion and garlic and place them in the bottom of the slow cooker. Similarly, add the seasoned pork roast to the slow cooker along with the chopped apples.
Mix the molasses, cider vinegar, broth, and apple cider together in a measuring cup and stir well. Spoon this mixture into the slow cooker.
To make crispy pork, place some of the meat in a single layer on a large baking sheet and broil for 5 to 8 minutes, or until the pork is as crispy as you like. Alternatively, you may sear the pork over high heat in a cast-iron skillet on the stovetop.
Notes
If you have access to a bone-in pork roast, you can use that instead of the boneless one that I use.
Pick your preferred variety of apples! I enjoy using honey crisp apples, Fuji apples, Gala apples, and Envy apples.
