  • 2 cups whole milk
  • 14 ounce can coconut milk
  • ½ cup raw short or medium-grain rice
  • ¼ teaspoon salt
  • 2 to 3 inch cinnamon stick
  • 2 large egg yolks
  •  cup sugar
  • 1 teaspoon pure vanilla extract
  • Toasted shredded coconut for garnish

 

INSTRUCTIONS

In a big, heavy saucepan, mix the rice, coconut, milk, and salt. Over high heat, bring to a boil while stirring continuously. After turning down the heat to low, add the cinnamon stick, cover, and simmer for fifteen minutes, stirring now and then.

After removing the cover, boil the rice for an additional 8 minutes or until it becomes cooked, stirring often. To avoid burning, stir virtually constantly toward the conclusion of cooking.

 

Whisk the egg yolks, sugar, and vanilla in a medium-sized bowl. Pour back into the pot and whisk in 1 cup of the cooked rice mixture. Cook for about a minute, stirring regularly, or until the mixture thickens and coats the back of the spoon. Take the pan off of the burner.

Transfer the pudding onto plates for dishing. Serve warm, cold, or room temperature, with toasted coconut as a garnish.
