HOW TO COOK SHRIMP ON THE GRILL:

  • I used medium-sized 26/30 shrimp for this dish, which equates to 26–30 shrimp per pound. I thus placed them on metal skewers to make sure they wouldn’t fall through the grill grates.

  • Wooden skewers are also an option; however, to prevent them from catching fire, soak them in water for a few hours before usage.
  • An alternative to skewering is to use a grill basket; this is a convenient way to reduce prep time if you’re pressed for time.
  • Shrimp should be quickly and hotly cooked. After ensuring that your grill is set to high, cook the shrimp for two to three minutes on each side. When both shrimp acquire an opaque rosy hue sides are cooked through.
