Officially, spring is just a few days away, and given the weather we’ve been experiencing these past few weeks, I couldn’t be more excited. I’m thrilled that spring is finally starting to feel like it’s outside! Spring also signals a slight shift in wardrobe because, well, summer arrives after spring and shorts do too. However, I don’t like to diet or give up my favourite meals, so this is how I manage to maintain balance.
There’s everything I love about these rollups. We’re talking about chicken, veggies—lots of red and green peppers, plus a few jalapeño peppers for a little heat—and cheese, of course.

Ingredients
- 8 ounce cream cheese (at room temperature (1 package))
- 1 jalapeno pepper (finely chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 6 green onions (chopped)
- 2 cups cooked chicken breast (chopped)
- 8 ounce white cheddar cheese (shredded (about 2 cups))
- ¼ teaspoon black pepper (ground)
- 7 Flatout flatbreads ((I used Multi-grain with Flax))
For Pesto Dip
- ½ cup sour cream
- ½ cup mayonnaise
- ⅓ cup pesto (store-bought)
- 1 green onion (chopped)
- 2 teaspoon freshly squeezed lemon juice
- ¼ teaspoon black pepper (ground)
Instructions
Set the oven to 425°F. Put parchment paper on one baking sheet and set it aside.
Using a spatula, thoroughly incorporate the cream cheese, peppers, green onions, chicken, cheese, and black pepper in a large bowl.
Evenly distribute roughly ½ cup of the chicken and vegetable mixture onto the flatbread.Try your hardest to roll the flatbread into a tight coil. Using a sharp knife, cut into 1-inch pieces; around 8 slices should come from each wrapper. For the seven flatbreads in the package, there should be sufficient chicken mixture.
Rollups should be put on the baking sheet. Bake for approximately ten minutes, or until the rollups begin to brown and the cheese begins to melt.
Make the pesto dip by combining all the ingredients in a small dish and whisking them together while the rollups are baking.
Present the rolls alongside the pesto dip.
Notes
It is entirely up to personal preference whether or not the cheese is melted when serving the rollups without baking them.
Roll up any leftovers, dip them, and store them in the refrigerator for up to three or four days in an airtight container.
