As far as I’m concerned, brownies are my thing, and blondies are typically a close second because dark chocolate is the greatest (obviously!). These White Chocolate Raspberry Blondies, on the other hand, are almost too good to eat! The batter is made with a creamy white chocolate, and there is a hint of lemon zest and fresh raspberries. They are light and fluffy, and they have the perfect amount of sweetness. These lovely blondies are simple to prepare and end up with a crust that is crackly and sparkly, just like a decent brownie would be. This dish is going to make you fall in love with it!
INGREDIENTS
- 3 oz 85g white chocolate, coarsely chopped
- 7 tablespoon 100g unsalted butter
- 2 large eggs at room temperature
- ½ cup 100g granulated sugar
- ¼ cup 55g packed light brown sugar
- 1 teaspoon lemon zest
- ½ teaspoon pure vanilla extract
- ½ teaspoon salt
- 1 cup plus 1 tablespoon 150g all-purpose flour
- 1 cup 130g fresh raspberries
- ½ cup 85g white chocolate chips
INSTRUCTIONS
- Preheat the oven to 350 degrees Fahrenheit. After lining a baking pan that is 8 inches by 8 inches with parchment paper, make sure to leave a two-inch overhang around each side of the pan.
- Once the white chocolate and butter have been mixed together in a heat-resistant dish, the bowl should be placed over a pot that contains water that is just barely simmering when the mixture is ready.
- Keep doing this until the liquid is completely melted and completely smooth. Alternately, melt the substance in the microwave and mix it frequently and in brief bursts when the power level is set to fifty percent.
- The eggs, sugar, lemon zest, and salt should be mixed together in a large basin using either a whisk or an electric hand mixer on high speed. The mixture should be whisked or beaten until it changes color and becomes thick.
