This vanilla cup cake is perfect for those moments when you suddenly get the urge for something sweet and you need it quickly. It’s done in a matter of minutes, and it’s tender and moist with delicious vanilla flavour. Additionally, you may make a funfetti cup cake variant by adding lots of sprinkles.

 

 

Ingredients

  • ¼ cup +1 ½ teaspoons all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • dash salt
  • 2 tablespoon butter , melted
  • 3 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon sprinkles

 

Instructions

In a mug, combine flour, sugar, baking powder, and salt; whisk.

Scoop up the bottom of the mug and scrape in the milk, melted butter, and vanilla essence while you stir until creamy. Add sprinkles and stir.

Microwave for 70–90 seconds*, or until the cake is barely set and has a glossy top. Before eating, let it sit in the microwave for one minute.

Notes

Give a specific cook time is difficult because microwaves vary widely. Start with 70 seconds, let it cool for a minute, and then check to see whether it’s set. If necessary, add another 15–25 seconds. Give it a minute in the microwave to rest.

Because you want the cake to be soft on the inside and because it will continue to cook as it cools, the trick with mug cakes is to stop cooking them earlier than you might imagine.

Making a Mug Cake With or Without Eggs

The recipe calls for one large egg yolk; the egg white should be thrown out. The mug cake has a beautifully bouncy texture and is made moist and soft by the egg yolk. The microwave will bake the egg yolk. However, you can replace the egg yolk with an additional tablespoon of milk if you would rather not use an egg when making this mug cake.

 

Serving & Topping Ideas

I usually eat mine right out of the mug, but you can also carefully scoop it out and serve it on a platter (just let it cool for a minute or two beforehand). It tastes great with a scoop of vanilla ice cream on top, or you could try drizzling on some icing. Be aware that the frosting will partially melt if you put it on top of the cake while it’s still hot.
