Ingredients :
- 8 ounces dry pasta*, gluten-free or regular
- 8 ounces grape or cherry tomatoes, cut in half
- 2Â garlic cloves, minced
- 1/2Â yellow onion, thinly sliced
- 1Â small zucchini, chopped and quartered
- 3 oz cremini mushrooms, sliced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon kosher salt
- 1 1/4 cup pasta sauce of choice
- 2 1/2 cups water
- 3 ounces fresh spinach
Instructions :
Put the pasta that hasn’t been cooked in a big pot or pan with deep sides. Add the rest of the ingredients, except for the spinach, and make sure they are well mixed. On high heat, bring the pot to a boil.
Lower the heat to medium-low and cook the pasta for 10 to 14 minutes, until it is al dente. Every two minutes, stir the liquid so that nothing sticks to the bottom of the pan.
Note: the type of pasta you use will affect the cooking time. I think you should start checking to see if it’s done after the minimum amount of time given on the package.
Take the pasta off the heat and mix in the spinach. Put the pasta into bowls and top with whatever you like after the spinach has softened.
You should eat this meal right away, but you can store leftovers in the fridge for up to 5 days.

I would recommend that you use shorter pasta shapes (such penne, rotini, shells, and macaronic) rather than longer noodles because the long noodles will not cook as evenly as the shorter pasta forms.
In my experience, brown rice pasta is the most effective gluten-free pasta to use when preparing gluten-free pasta.
