INGREDIENTS :
- 1 can (15 ounces) chickpeas, rinsed and drained, or 1 ½ cups cooked chickpeas
- ½ teaspoon baking soda (if you’re using canned chickpeas)
- ¼ cup lemon juice (from 1 ½ to 2 lemons), more to taste
- 1Â medium-to-large clove garlic, roughly chopped
- ½ teaspoon fine sea salt, to taste
- ½ cup tahini
- 2 to 4 tablespoons ice water, more as needed
- ½ teaspoon ground cumin
- 1 tablespoon extra-virgin olive oil
- Any of the following garnishes: drizzle of olive oil or zhoug sauce, sprinkle of ground sumac or paprika, chopped fresh parsley
INSTRUCTIONS :
- After placing the chickpeas in a saucepan of medium size, add the baking soda to the mixture. The chickpeas should be submerged in water that is several inches deep, and then the combination should be brought to a boil over high heat.
- Continue cooking the chickpeas, reducing the heat if required to prevent them from overflowing, for around twenty minutes, or until the chickpeas appear bloated, their skins are peeling off, and they are exceptionally soft.
- After draining the chickpeas, place them in a strainer with a fine mesh and run approximately thirty seconds of cool water over them. For this recipe, there is no need to peel the chickpeas; just set them aside.
- While this is going on, put the lemon juice, garlic, and salt in a high-powered blender or food processor.
- The garlic should be processed until it is very finely diced, and then the mixture should be allowed to rest for at least ten minutes so that the flavour of the garlic can become more mellow.
- The tahini should be added to the food processor, and the mixture should be blended until it is thick and creamy. Every so often, the processor should be stopped to scrape down any tahini that has become stuck to the sides or the bottom of the machine.
- During the time that the food processor is operating, slowly pour in two teaspoons of cold water. It is necessary to scrape down the food processor and blend the ingredients until they are completely smooth, pale, and creamy.
- It is possible that you will need to add one to two teaspoons more of ice water if your tahini was originally of a very thick consistency.
- To the food processor, add the cumin as well as the chickpeas that have been precooked and drained. While mixing, add the olive oil in a slow, steady stream.
- For approximately two minutes, blend the ingredients together until they are completely smooth, making sure to scrape down the sides of the machine as needed.
- In order to obtain a texture that is extremely creamy, you may need to add additional ice water by the spoonful.
- Taste the dish and make any required adjustments. I nearly always add an additional half teaspoon of salt to enhance the overall flavour, and I add an additional tablespoon of lemon juice to add an additional kick.
- You should transfer the hummus to a serving bowl or platter, and then use a spoon to make swooshes on the surface of the hummus.
- After topping with garnishes of your choosing, serve the dish. Leftover hummus can be stored in the refrigerator for up to a week if it is covered and stored safely.
NOTES :
- This recipe will teach you how to quickly prepare dry chickpeas in a hurry. The mixture of 5 ounces (¾ cup) of dried chickpeas and ½ teaspoon of baking soda should be combined in a big saucepan.
- In addition, the pot should be filled with water. While the liquid is being brought to a boil over high heat, skim the foam that forms on the surface as it accumulates.
- On medium-high heat, continue to boil the chickpeas until they become very mushy and fall apart, which should take approximately one hour to one hour and fifteen minutes.
