Super Bacon Leek Pasta Recipe – Learn like a pro:- I felt stuck for supper in 2021. Even though my dinner recipes were our favorites, I was bored of making them. I resolved to try one new recipe per week—easy, right? One of my first new recipes, Creamy Bacon and Leek Pasta, was a hit. Already in February, I’ve made it three times! Whoops. While it may not align with my goal of exploring new recipes, this one is fantastic.Â
Super Bacon Leek Pasta Recipe – Learn like a pro
There is no specific sort of small pasta that is required; but, we have a special fondness for rigatoni, radiators, or rotini. In general, I use whatever I happen to have on hand with me.
Ingredients
- 1 lb. short pasta
- 12 oz. package bacon, cut into 1/2-1 inch pieces (We prefer beef bacon, but pork works well too)
- 2 bunches leeks, white and light green parts only (Leeks halved lengthwise, rinsed very well and thinly sliced)
- Salt, to taste
- Black pepper, to taste
- 1.5 cups half and half
- 2/3 cups grated parmesan cheese
- 1 cup reserved pasta water

Instructions
- Before adding the pasta to the boiling salted water, bring it to a boil and cook it until it reaches the al dente stage. While the pasta is cooking, put aside approximately one cup of the starchy pasta water.
- lay the bacon pieces that have been sliced up in a big sauté pan and fry them until they get crispy. Remove them using a slotted spoon and lay them on a plate that has been lined with paper towels.
- Carefully remove all of the bacon fat, with the exception of two tablespoons. In the pan with the leftover drippings, add the sliced leeks and cook them for about three to five minutes, or until they begin to get more tender.
- Add approximately half a teaspoon of salt and half a teaspoon of pepper to the leeks, and adjust the amount of salt and pepper to taste.
- Add the half and half and whisk it in gently before allowing it to cook for two to three minutes.
- Add the pasta to the skillet along with the parmesan cheese, three-quarters of the bacon, and part of the pasta water that was set aside (you can add as little or as much water as you need until the sauce achieves the consistency that you want it to have). Gently stir until everything is incorporated.
- The remaining bacon, a sprinkle of parmesan cheese, and a dash of black pepper should be sprinkled on top before serving.
